Reared in the Hampshire Test and Itchen rivers by the mercurial Pete, these beautiful meaty fish are hand filleted before being smoked for 18 hours over nothing but Oak. A somewhat more subtle flavour to the more bombastic Smoked Salmon from Ullapool, they are a beautiful complement to your Christmas tables - whether that's over some bilinis (not bikinis) before the main event or as a sharing platter either side of Xmas Day.
